Ingredients

  • 2 cups flour
  • ¾ cup cocoa powder
  • ½ teaspoon salt
  • ¾ cup sugar
  • 2 teaspoon baking powder
  • ½ cup coconut oil
  • 2 eggs
  • 1 ¼ cup buttermilk (1 ¼ cup milk + 1 tablespoon vinegar)
  • 2 teaspoon vanilla extract
  • ½ cup chocolate chips
  • 1 ½ cup shredded zucchini

Instructions

  • Preheat oven to 350° and line muffin cups.
  • In a large bowl, combine the flour, salt, sugar, and baking powder.
  • Make a hole in the center and add the eggs, buttermilk, oil, and vanilla extract. Mix until just combined.
  • Fold in the chocolate chips and zucchini.
  • Fill muffin cups to the top. Bake for 20-25 minutes.
