These incredibly addicting potatoes stay crispy on the outside and soft and creamy on the inside, thanks to the magic of the air fryer. Make them for lunch, dinner, breakfast, snacking and party appetizers. Roasted potatoes are perfect paired with a juicy ribeye steak, a hearty meatloaf and so much more.

Air fryer baby potatoes are seasoned with fresh rosemary, garlic powder, paprika, salt and pepper, for a simple side dish that pairs well with just about any meat or fish dinner. Simply rub them with oil, seasonings, and herbs and pop them in your air fryer. They'll come out roasted to perfection in barely 20 minutes!

I have this air fryer, the Instant Pot Duo Crisp, and I love it! It's awesome to be able to pressure cook part of a recipe and then finish it up in the air fryer if necessary. I also love that it's a basket type air fryer, it's so easy to clean!

How To Get Crispy Air Fryer Baby Potatoes

It's easy to get the crispiest potatoes ever if you follow these tips:

  • dry the potatoes well- if they're wet they won't crisp up
  • don't overcrowd the basket- if you double the recipe make sure to cook in batches
  • use enough oil to coat the potatoes, but not too much, and use a high smoke point oil- I use extra virgin olive oil for most of my cooking, but avocado oil may give you an even crispier outside skin
  • cook at high heat (400 degrees Fahrenheit), since low temperatures won't create a crispy crust
  • shake half way through so the potato pieces all cook evenly

Air Fried Baby Potatoes Ingredients

You need only a few pantry staples to make this recipe.

  • baby potatoes
  • olive oil or avocado oil
  • dried or fresh rosemary
  • paprika
  • garlic powder
  • salt
  • black pepper

Any baby potatoes work with this recipe, so feel free to use a mix of red, gold, and even purple potatoes. The seasoning mix of rosemary, garlic powder, paprika, salt, and pepper keeps this recipe simple and fresh, but still packed with flavor. It doesn't take much to make a creamy baby potato taste fantastic. Sometimes less is more.

But there are a few variations that you can make that still create a delicious rosemary and garlic roasted potato dish. Add parmesan cheese, replace the garlic powder with minced garlic or roasted garlic or swap out the seasonings with parsley, thyme or oregano.

How To Make Air Fryer Baby Potatoes

  1. In a mixing bowl, rub the sliced baby potatoes in olive oil. Add the garlic powder, dried rosemary, paprika, salt and black pepper. Mix until potatoes are evenly coated.
  2. Spray the air fryer basket lightly with oil and place potatoes inside. Set to 400°F/204°C for 15-20 minutes. Shake basket or toss potatoes half way through. Test for doneness by piercing with a fork. If more time is needed, cook in 2 minute increments until potatoes are tender inside and with crispy, golden brown skins on the outside.
  3. Remove cooked potatoes from basket, toss with fresh herbs if desired and serve with your favorite main.

Recipe Tips

  • For even quicker preparation, leave the potatoes whole and increase the cooking time by 5-10 minutes.
  • Use a high smoke point oil for the best crispiness.
  • Don't peel the potatoes. If you remove the skins they won't crisp up nearly as much.
  • No need to boil! This recipe is kept quick and easy by tossing the potatoes into the air fryer raw.

    Do you need to boil these first? I have a breville air fryer pro & things seem to take a little longer in it.

      You could, but it's not required. If you don't want to take that extra step you can cut them really small to avoid a long cooking time.

    Perfect, simple recipe for air fryer potatoes. I have an air fryer toaster oven, which seems to require significantly more time than a dedicated air fryer. They were nicely done in 25 minutes, leaving just enough time for grilling the steak and finishing a vegetable. They are very seasoned and tasty, but the amount of spices could easily be reduced or adjusted to taste. Thanks for this recipe.
