The seasoning mix of rosemary, garlic powder, paprika, salt, and pepper keeps this recipe simple and fresh, but still packed with flavor. It doesn't take much to make a creamy baby potato taste fantastic. Sometimes less is more.
But there are a few variations that you can make that still create a delicious rosemary and garlic roasted potato dish.
Optional Ingredients
- Add grated parmesan cheese to make crispy parmesan and rosemary roasted potatoes.
- Replace the garlic powder with two or three cloves of minced fresh garlic.
- Add another tablespoon or two of fresh herbs, like parsley or thyme.
Step-By-Step Directions
This is an easy 2-step recipe. When making air fryer baby potatoes, always make sure the potatoes are washed and fully dried before seasoning. Slice them in half and then follow these steps.
STEP 1: Rub the sliced baby potatoes in olive oil. Add garlic powder, salt, pepper, paprika and rosemary. If adding other herbs or parmesan cheese, add them now. Mix until the potatoes are evenly coated with the seasoning.
STEP 2: Spray the air fryer basket lightly with oil and place the seasoned potatoes inside. Set to 400 degrees Fahrenheit and the time for 15 minutes. Shake the basket or toss the potatoes half way through.
Remove from the basket, serve and enjoy!
Because air frying is incredibly awesome, but still a little scary for those who are new to it, let's quickly recap— and set that hesitancy aside!
Yes! You can (and should) air fry just about everything that you can bake in the oven, including baby potatoes. Rub them in a little bit of olive oil and seasonings and put in the air fryer for between 12 and 20 minutes, depending on potato size.
This is an easy recipe for beginners to the air fryer. What I love about the air fryer is that you can check on your food at any point while it's cooking. So if you're unsure of how long a food needs, just simply check on it throughout the cooking process!
I hope this easy recipe inspires you to air fry more of your favorite foods! And if you're already an air frying expert, I hope this baby potato recipe becomes part of your meal rotation.

The potatoes were pretty good. I do think they have too much Rosemary. In the future, I will add less. I think some cheese would have been good on these. I think I'll add cheese next time I make them.
Paige
These were delicious! Made for my family yesterday and the grandpa said they were the best he’s ever had! Warmed my heart 🙂 thank you!
I made salmon with these potatoes, golden veg rice, cauliflower cheese, broccoli, peas and asparagus. Was such a nice combination for a dish.
Paul

I have made these before and were simply amazing
Jennifer
Can you use any potatoe, like russet and just cut up on smaller pieces?
Kristina
Hi Jennifer- yes you can! Just watch the timing, depending on how small you cut them.
Julie
PINNED. Fully making these, and that video made me drool! I am also eating potatoes right now but yours look AMAZING!
Judith
I made these last night. They were absolutely delicious. I added thyme. I made for two people so cut ingredients down. My husband has requested them again tonight. Thank you.
Kristina
I am so glad you and your husband enjoyed them! Thyme is a great addition. 🙂

Genie

Heidi
Loved these potatoes. Had them tonight with fish. Delicious and no hot oven

WAY too salty. The flavor would have been good if it wasn’t so salty.
Kristina
I understand! Salt is such a personal preference- next time only use half before cooking and then season them once they're cooked and you've tasted it.
Anonymous
Easy, use less salt!
Mary Disterhoft
I want to try these, but wi probably cut salt in 1/2 since I don't care for overly salty food. Will probably not use the paprika since I am not a fan. Think they will be good without paprika?
Kristina
I think they will be good without the paprika. If you like thyme, that would be a great addition to replace any lost flavor.
Mat Baker
I think you must have used too much salt, Dave. Just a wild guess.
John O'Neil
Made this tonight but added Caribbean jerky rub half a teaspoon well happy if you like it with a kick thanks
Kristina
That sounds great! I like to add Cajun seasoning sometimes too.
Marie
Sounds good. What shelf on 360 xl air fryer do you put on?
Kristina
If you're cooking the potatoes alone, use the middle shelf. If cooking with other foods on different shelves, use the top for the potatoes. Enjoy!
Julia
What a great way to use air fryer!

This is my favorite flavorful combination: potato with rosemary. I am used to making small potatoes, but a bit different way. Your recipe sounds delicious, and I cannot wait to give it a try!
