Our delicious Slow Cooker Beef Tips with gravy is a quick-to-prepare dinner. It's inspired by my Instant Pot beef tips and gravy recipe, but this time I add a few splashes of heavy cream to create a creamier sauce (and a lot of it to scoop over potatoes or noodles!).

Serve it over mashed potatoes, mashed cauliflower, noodles, or rice for a hearty meal the whole family will love. Beef tips and gravy is one of my favorite dinners, next to crockpot pepper steak and slow cooker Middle Eastern beef stew!

Ingredients

  • 1 lb beef tenderloin cubes
  • ½ of a large sweet onion
  • 2 cloves of garlic
  • 1 ½ cups beef broth
  • ¼ cup red wine (such as Cabernet Sauvignon or Merlot)
  • 1 tablespoon worcestershire  sauce
  • 2 tablespoon heavy whipping cream
  • Seasonings: ½ teaspoon dried thyme and oregano, ¼ teaspoon dried oregano and basil
  • Roux: 2 tablespoon melted butter and 2 tablespoon flour
  • Salt and black pepper to taste

Step-By-Step Instructions

To make our crockpot beef tips:

  1. Add beef cubes, diced sweet onion, minced garlic, beef broth, red wine, worcestershire  sauce and all seasonings to the slow cooker. Mix.
  2. Melt the unsalted butter in the microwave. Stir in the flour to make a paste. Add to the slow cooker and mix until smoothly combined into the sauce.
  3. Cover and set to LOW for 4-5 hours or HIGH for 2-3 hours.
  4. Check internal temperature of beef to ensure it's reached 165 degrees Fahrenheit. If not, continue cooking in 30 minute intervals as needed. Stir in the heavy whipping cream. Taste and season with salt and black pepper as desired.
  5. Serve warm, over mashed potatoes, noodles or rice with your favorite roasted vegetables or side salad, like air fried baby potatoes, salt and pepper green beans or roasted asparagus.

Chef's Tips

  • Cut beef into evenly sized cubes for consistent cooking.
  • Use a good quality red wine for the best flavor (not cooking wine).
  • For a thicker sauce, let sit uncovered for 10-15 minutes before serving.
  • Cook on the low setting if you can rather than the high setting, as the longer and slower cooking process creates a more tender beef. Cooking on high may cause the meat to dry out.

How To Store

Store slow cooker beef tips with gravy in the refrigerator in an airtight container for up to 5 days or in the freezer in freezer-safe storage bags for up to 6 months. The extra sauce should be stored separately from the meat. Thaw overnight and warm on the stovetop or in the microwave, adding a splash of broth to the sauce if needed.

Recipe FAQs

Can I Use A Different Cut Of Meat?

Yes, stew meat or cubed chuck roast can be used but may need more cook time to increase tenderness.

Do I Need To Brown The Meat First?

You can sear the meat on the stovetop for a few minutes if you'd like, but it's not required. Searing the meat will create a little more flavor, but not significantly enough to impact the overall recipe.

Can I Cook On High Instead Of Low?

Yes, but cooking on high can dry out the meat. Check for doneness at 2 hours to avoid overcooking.

Does Cooking Time Change If I Increase Servings?

Doubling or tripling the recipe may increase cook time. Cook on low, check at 4 hours and allow up to 6 hours for a full slow cooker.

Notes

Beef: Stew meat or cubed chuck roast can be used but may need more cook time to increase tenderness.
Serving: Turn into a complete meal by serving over garlic mashed potatoes, mashed cauliflower, white rice or basmati rice.
Storing: store leftover beef tips in an airtight container separately from the gravy. Both will keep in the refrigerator for up to 5 days. It can be frozen for up to 6 months using freezer safe storage bags. Defrost in the fridge overnight or do a quick thaw in the microwave.
