Add beef cubes, diced sweet onion, minced garlic, beef broth, red wine, worcestershire sauce and all seasonings to the slow cooker. Mix.
Melt the unsalted butter in the microwave. Stir in the flour to make a paste. Add to the slow cooker and mix until smoothly combined into the sauce.
Cover and set to LOW for 4-5 hours or HIGH for 2-3 hours
Check internal temperature of beef to ensure it's reached 165℉. If not, continue cooking in 30 minute intervals as needed.
Stir in the heavy whipping cream. Taste and season with salt and black pepper as desired.
Serve warm, over mashed potatoes, noodles or rice with your favorite roasted vegetables or side salad.

Beef: Stew meat or cubed chuck roast can be used but may need more cook time to increase tenderness.Serving: Turn into a complete meal by serving over garlic mashed potatoes, mashed cauliflower, white rice or basmati rice.Storing: store leftover beef tips in an airtight container separately from the gravy. Both will keep in the refrigerator for up to 5 days. It can be frozen for up to 6 months using freezer safe storage bags. Defrost in the fridge overnight or do a quick thaw in the microwave.Tip 1: Cook on the low setting if you can rather than the high setting, as the longer and slower cooking process creates a more tender beef.
