It takes only 4 ingredients and 5 minutes of preparation to make these easy Piña Colada Popsicles. The rest of the time happens effortlessly in the freezer. Make them with rum for a boozy adult treat or without to keep them kid-friendly. I like to make half a batch with alcohol and half without, so my whole family can enjoy them while hanging around outside on a hot summer day.
They're also dairy-free, vegan and gluten-free, so serve them up to your guests at your next summer barbecue! Ingredients & Variations
Made with coconut cream, coconut milk yogurt, pineapple juice, and fresh pineapple, they are a Caribbean-inspired popsicle that will make you feel like you should be hanging out on the beach of a tropical island! That's only you need. Rum is optional.
- Cream of coconut: I don't recommend using unsweetened coconut cream. I used it once by accident and the result was not good. It was not sweet at all, and did not live up to what a piña colada should be.
- Coconut milk yogurt: this gives it an extra coconuty taste and keeps it dairy-free. But you can certainly use plain yogurt, or any other traditional yogurt that you'd like. Try something with a different flavor to give it a little twist.
- Fresh pineapple: cut your own, use precut pineapple (my fave for simplicity!) or use a can to keep it simple and less messy.
- Pineapple juice
What You Need
Here is a list of my favorite popsicle-making tools.
- Blender: any blender will do!
- Popsicle molds: I have these silicone popsicle molds. They make removing frozen desserts extremely easy. Plastic cups work if you don't have molds.
- Wooden craft sticks: You should be able to easily find these in big packages at dollar stores and craft stores.
- Storage bags: I use bags to save popsicles that haven't been fully eaten. Ziplocks baggies work great if you don't want to buy anything extra.
Don't Have A Blender?
If you don't have a blender, no worries! You can make popsicles by using a fork or potato masher to crush the ingredients, a hand mixer or stand mixer or even a whisk and mixing bowl.


Recipe Notes
- Yield: This recipe makes 10 large (or about 3 to 3.5 oz) popsicles. You can half it, double it, or even triple it while keeping all ingredients proportionate.
- Storing: Keep in the mold or another airtight freezer-safe container. You can also use special storage bags like these to keep popsicles that aren't fully eaten for later or when needing to use your mold for another batch before they have all been eaten. They'll last about 6 weeks.
How To Make Piña Colada Popsicles
- Add all ingredients to your blender. Blend at high speed until the mixture is mostly smooth. Some chunks are completely fine! This will take between 30-60 seconds depending on your blender.
- Fill your popsicle molds, leaving a little bit of space for them to expand while freezing. Insert the sticks into the top and cover.
- Freeze for 6-8 hours. Remove from molds and enjoy!
How To Remove Popsicles From A Mold
To easily remove the popsicles, run the mold under warm water for 10-15 seconds. Then wiggle the stick gently and slide the popsicle out.

- 2 ½ cups pineapple diced
