This Air Fryer Quesadilla recipe is a simple, quick and barely-any-effort lunch or dinner for busy days and nights. Cooking quesadillas in the air fryer rather than pan frying results in a mouth-watering, evenly cooked, melt-in-your-mouth meal.
This recipe is the air fried version of my pan fried Mediterranean quesadillas, which combines mozzarella cheese, feta, spinach, chopped tomatoes and red onions. Melted cheese, crispy tortilla, and healthy ingredients are what you get after only 5 minutes.
But you can use your favorite fillings if you'd like. Just promise that you'll come back to check out the Mediterranean quesadilla version. You don't want to miss it!
It's one of my readers favorite recipes, so today we are making it even better— which I never thought was possible. The air fryer releases the sweetness of the tomatoes and the creaminess of the feta and mozzarella. The spinach blends right into the background, and the onions are sweet and soft.
No pockets of unmelted cheese or undercooked ingredients, no burnt tortilla. Pure quesadilla perfection!
Mediterranean quesadillas can be dipped in salsa, topped with hummus or Greek yogurt or served with a cucumber tomato chickpea salad.

You'll need:
- Fresh spinach: don't use frozen
- Diced tomatoes: cherry or grape are my favorite because of their sweetness
- Mozzarella cheese
- Feta cheese crumbles or freshly shredded feta
- Diced red onions
These simple, fresh, whole ingredients are mixed together and tossed with salt and pepper to create a mouth-watering, healthy quesadilla. And if you'd rather make a different quesadilla, here are some more ideas for fillings.

How To Air Fry Quesadillas
It's incredibly simple to make quesadillas in the air fryer.
- Cut the tortillas in half (keep whole for larger baskets). On one side, layer with mozzarella, spinach, red onion, tomato, feta, and more mozzarella. Season with a little pepper. Alternatively, layer with your favorite combination of cheese, vegetables, and quesadilla fillings.
- Fold in half again. Insert a toothpick into the tip to secure.
- Spray the air fryer basket with oil. Place as many quesadillas as fit into the basket. It's okay if they slightly overlap as in the picture. Spray the tortillas lightly with oil.
- Set the air fryer to 375° for 5 minutes. Remove toothpicks and flip halfway through. If tortillas are not browned to your liking after 5 minutes, continue to air fry in 1 minute increments.
- Remove from the basket using tongs and let cool before serving.
Chef's Tips
- Sometimes the air flow can cause the tortilla to open in the beginning. Use a toothpick to hold the tortilla together to avoid this. You can also check on them a few minutes in and press down with a spatula to secure.
- Spray the tortilla lightly with cooking oil to obtain a crispy shell, but not one that burns.
- You may need to cut the quesadilla in half before cooking, depending on how big your air fryer basket is. With my Instant Pot Duo Crisp, I have to cut a large tortilla in half and fit them in with one side overlapping slightly (see picture above).
- Always flip the quesadilla half way through, or when the air fryer alerts you to "turn food". Gently scrape under the tortilla with a spatula while using tongs to hold it together and flip. It's easier to flip the tortillas if they are cut before air frying, like I mentioned in my previous tip.
- If making multiple batches, they may cook quicker with each one. Check on the quesadillas a few minutes in and reduce time if needed.
- Use any fillings for your favorite quesadillas, but never use raw meat!
Recipe FAQs
Quesadillas should be air fried for around 5 minutes at 375 degrees. Use a higher temperature and you risk burning the tortilla. Time may vary depending on your air fryer, so always check a few minutes into cooking and extend the time as desired. Always flip halfway through for an evenly crisp quesadilla.
Fridge: keep in the fridge for up to 2 days, wrapped tightly.
Freezing: wrap in plastic or put in an airtight bag and freeze for about 3 months.
Defrosting: defrost overnight in the fridge or use the defrost option on the microwave when in a pinch.
Reheating: to regain their crispiness, reheat in the toaster for a few minutes or air fry for another minute or so (watch carefully so they don't burn!)
