Ingredients
- Pizza dough: I recommend making one of my homemade doughs for the best flavor and texture rather than using canned or packaged dough. This is my recipe for a thick crust pizza dough and this is my thin crust New York style dough. I make my doughs in a bread machine. If you don't have a bread machine, this thin crust pizza dough can be made by hand as can my NY style dough.
- Pizza sauce: this our go-to no cook pizza sauce recipe.
- Mozzarella cheese
- Roasted garlic, or garlic confit
- Tomatoes, or roasted tomatoes
- Black olives
- Sweet peppers
- Red onion
- Fresh spinach (don't use frozen spinach here)

Step-By-Step Instructions
- With the pizza stone or pan in the oven, preheat the oven to 525℉. Press the tomato slices between paper towels to remove some of the moisture.
- Prepare the pizza dough according to the package instructions. Shape the dough on a pizza peel generously coated with semolina flour or cornmeal, pressing down on the center to leave the outer crust slightly raised until you've formed a 12-14 inch circle.
- Evenly brush pizza sauce on the dough. Sprinkle evenly with the mozzarella cheese. Layer with tomato slices, black olives, red onions, spinach leaves, sweet peppers, and roasted garlic cloves. Very lightly brush the outer crust with pizza sauce.
- Transfer the prepared pizza to the preheated pizza stone or pan. Bake for 12-15 minutes, or until the cheese has melted and just begins to brown.
- Remove the cooked pizza using the pizza peel and let cool for a few minutes before slicing into 8 pieces and serving.

Variations
Vegetables: There are so many options! Mushrooms, artichokes, kalimata olives, fresh basil, romaine lettuce, kale, green peppers, arugula, sweet corn, broccoli, cauliflower, sun dried tomatoes, caramelized onions and asparagus are great options.
Cheese: You can replace the mozzarella with or use a combination of mozzarella with cheddar cheese, feta cheese, asiago cheese, pizza blend and Italian cheese blend.
How To Store
Store pizza in the fridge wrapped in plastic wrap or foil for up to 7 days. To freeze pizza, wrap each slice individually in freezer-safe plastic wrap or place into storage baggies. Freeze for up tp 6 months. Reheat directly from frozen in the oven or air fryer, or thaw in the fridge overnight and warm in the microwave.
