Tortilla Pizzas are such an easy and quick recipe! If there are any ingredients we always have on hand, it's cheese, pizza sauce, and tortillas. They are perfect for really busy days and nights. We love them as much as we love mini pizzas and pizza poppers (which you should definitely try next!). Or even this pizza tater tot casserole!

What's so great about tortilla pizzas is that everyone can make one with their favorite toppings or whatever ingredients you have on hand. You can cook them in the toaster, air fryer, oven, on a grill, on an indoor griddle or in a cast iron skillet or frying pan. So no matter what appliances you own (or don't) you can enjoy this quick and simple recipe.

Depending on the ingredients you're using, you can make them vegan, vegetarian, gluten-free and even dairy-free. Tortilla pizzas are a great idea for when you have limited ingredients, picky children, or a family with lots of different diet needs or allergies.

Ingredients and Substitutions

  • Sauce: our no-cook pizza sauce is probably the most popular choice, but marinara sauce, pesto, buffalo sauce, white garlic sauce and even hummus are great options.
  • Tortilla: both flour tortillas and corn tortillas are great. Flour tortillas have a more subtle flavor and taste more like bread than corn tortillas. Use any size. I like using small tortillas for my kids and medium or large tortillas for the adults.
  • Cheese: mozzarella cheese is my default, but cheddar cheese, pizza blend cheese, Mexican cheese, asiago, etc. are all delicious. It just depends on what style of pizza you're making!

Topping Suggestions

  • Pepperoni
  • Diced ham
  • Ground beef
  • Italian sausage
  • Diced, shredded, or sliced chicken
  • Meatballs
  • Crispy bacon
  • Green pepper slices
  • Sliced tomatoes and basil
  • Fresh mozzarella pearls or slices (my kids LOVE this!)
  • Fresh spinach
  • Olives
  • Pineapple pieces

Often I'll add toppings based on what I have leftover in the fridge from other dinners, such as ground beef from taco night, diced chicken from nacho night, or meatballs from our spaghetti dinner.

Instructions

  1. Lay the tortillas on a parchment-lined baking sheet (if cooking with another method see instructions below). Spread 2 tablespoons of pizza sauce onto each tortilla. Sprinkle evenly with ¼ cup of mozzarella cheese. Add any toppings if desired.
  2. Bake in the oven preheated to 400°F for 5-7 minutes, or until cheese begins to turn golden brown. Remove baking sheet from the oven and let pizza cool for a few minutes before slicing and serving.

Skillet/Frying Pan

Prepare tortillas as instructed above. Heat an oiled pan on medium-high heat, then add the tortilla pizza to the pan. Cook over medium heat until the tortilla is crispy and the cheese has melted, about 3 minutes. Remove from pan and let cool a few minutes before serving.

Air Fryer/Toaster

Prepare tortillas as instructed above. In batches, place into the air fryer basket or on the toaster tray. Cook for 3-5 minutes at 375°F, or until cheese turns golden brown. Remove carefully using a spatula and let cool for a few minutes before serving.

Storing

If you have leftovers, store them wrapped in plastic in the fridge for up to 5 days. Reheat in the microwave, air fryer, toaster or oven. They can be frozen in plastic freezer bags for up to 3 months.

Variations for Different Diets

Vegan: most tortilla wraps are vegan (just check your package) and use a vegan mozzarella cheese.

Low Carb: use low carb tortillas and avoid higher carb toppings, such as pineapple and onions.

Gluten-free: use corn tortillas rather than flour tortillas and make sure your cheese is gluten free (most are).

Dairy-free: stick to a dairy-free or vegan cheese.

Are Tortilla Pizzas Good?

Since we've made these 3 times this week, my answer is yes!

Are Tortilla Pizzas Healthy?

Yes, they can be considered healthy (this is subjective!). Less bread is used as the base compared to traditional pizza dough so you'll take in less calories and carbs per serving. Corn tortillas are also a little healthier than flour tortillas as they are made with whole grains and have less calories, carbs and sodium than flour tortillas. So for the healthiest tortilla pizza, use corn tortillas and vegetable toppings.
