These twice baked potatoes are one of my very first original recipes, from when I had moved away from home and was establishing a recipe box of my very own. Remember those ancient hand-written recipe boxes?! I still have mine, and I use it almost every day. Every time I see this twice baked potato recipe while thumbing through it, I think about the time it took to perfect these creamy, buttery cheddar potatoes. And now I am excited to share this perfected recipe with you!
I will warn you, these potatoes are addicting. You may need to make extra!
Kid-Friendly Twice Baked Potatoes
These twice baked cheddar potatoes are totally kid-friendly as the recipe is written. I actually use the cut off potato tops as the "shell" of the baked potatoes for my kids, especially the baby since the potato skin is too tough for her to chew.
So don't discard the tops of the potato. Simply put on a few scoops of the potato mixture, top with cheddar and chives, and bake it as you would the rest of the potatoes.

Ingredients in Twice Baked Potatoes with Cheddar Cheese and Chives
To make twice baked potatoes with cheddar, you need:
- medium to large potatoes: russet or Idaho are my preferred
- cheddar cheese: sharp or extra sharp and freshly shredded works best
- yellow or sweet onions
- milk
- butter
- salt and pepper
- chives: fresh or frozen will taste the best but if you only have dried that's fine too
Variations
In addition to the above ingredients, you can make these changes to the original recipe:
- add fresh minced garlic or garlic powder for a garlic cheddar twice baked potato
- add bacon bits to the potato mixture
- top with sour cream in addition to the cheddar and chives
How to Make The Best Twice Baked Potatoes with Cheddar Cheese and Chives
Here is how to make them:
First, wash the potatoes and pierce them with a fork. Bake them directly on the oven rack for 1 hour and 20 minutes at 350 degrees. While the potatoes are cooking, saute the onions in oil for about 7 minutes, until they are translucent and soft. If you're adding minced garlic, saute it with the onions during the last 2 minutes.
Remove them from the oven and transfer to a cutting board. Hold them using an oven mit and cut the tops off. Be careful, as the insides will be very hot! Scoop out the cooked potato and put in a bowl. Don't discard the tops here. You can use them as mini twice baked potatoes.
Next, add the onions, cheddar, milk, and butter to the bowl of potatoes. I usually add the butter first so that it melts good and then the rest of the ingredients. If adding bacon bits or garlic powder, do that now.
Mix well, either with a fork or potato masher making sure to crush any large potato chunks. Season with salt and pepper. Taste and add more to your liking.
Now fill the shells with the potato mixture. Top with extra cheddar and chives.
Bake for another 20 minutes, this time on a baking sheet.
Then serve and enjoy! These are great with a dollop of sour cream to serve.
Even though these twice baked potatoes take about 2 hours to make, almost all of that time is inactive for you. While the potatoes bake for 80 minutes initially, you are free to go about your business. When they are baking away for the second time, you are again free to do whatever you'd like!

Ingredients
- 4 medium potatoes
- 1 small onion, diced
- ¾ cup milk
- 3 tablespoon butter
- 1 cup cheddar cheese
- salt + pepper to taste
- chives for garnish
Instructions
- Wash and pierce potatoes with a fork. Bake in the oven at 350° for 1 hour and 20 minutes.
- Saute onions in olive oil until translucent, about 7 minutes.
- Cut off tops of potatoes and scoop insides into a bowl.
- Add onions, ¾ cup cheddar cheese, milk, butter, salt and pepper. Mash, thoroughly mixing. Taste and adjust salt and pepper.
- Place mashed potatoes back into potato skin shells. Sprinkle with remaining cheddar cheese and chives. Bake for 20 minutes.

These twice baked potatoes with cheddar and chives should be the star of your dinner, so they are best served with a simple meat and vegetable. Grilled chicken and roasted or steam broccoli are our favorites. They are also a great side for Parmesan crusted fish.
