This easy recipe for Slow Cooker Baby Potatoes takes sweet and creamy baby potatoes, seasons them with a blend of flavorful herbs and spices and cooks them til perfectly tender. When cooked in the crock pot, potatoes are hands off with very little preparation. This makes them perfect for busy weeknights, lazy weekends and big holiday or family gatherings. This easy slow cooker baby potatoes recipe uses simple ingredients.

Baby potatoes: also called creamer potatoes, these waxy potatoes hold theie shape well making them perfect for low and slow cooking methods in addition to being in soups.

Olive oil: I prefer extra virgin olive oil in my recipes but any neutral cooking oil works in this recipe.

Seasonings: rosemary, parsley, paprika, garlic powder, salt and black pepper. This recipe calls for dried herbs. You can use fresh herbs, but use three times more than you would dried.

Instructions

My slow cooker baby potatoes recipe is made in just 3 easy steps.

STEP 1: Wash and dry the potatoes. Cut into halves.

STEP 2: Place the cut baby potatoes into the slow cooker. Toss with extra virgin olive oil, dried rosemary, dried parsley, garlic powder, paprika, salt and black pepper.

STEP 3: Set to HIGH for 2-3 hours, until the potatoes are fork tender. If possible toss halfway through cooking. *Begin checking the potatoes for doneness at the 2 hour mark.

Optional: Transfer the potatoes to a serving dish and broil for 3-5 minutes on high to give the potatoes a crispy exterior.
