This easy recipe makes a delicious Crockpot Chicken Broccoli and Rice Casserole with minimal effort and big flavor. Simple ingredients are used to make it quick, family-friendly and great for meal prepping, too.

We love making casseroles in our slow cooker for how simple they are to prepare and cook. Crock Pot Chicken Rice and Broccoli Casserole is another one of our favorite one-pot dinners. Just like this crockpot stuffed pepper casserole and stuffed cabbage roll casserole, our cheesy chicken and rice dish has a big flavor profile and minimal preparation and clean up.
While it makes a complete hearty family dinner, this dish can be used for meal planning throughout the week too. The slow cooker makes it easy - just add your ingredients and let it do all the cooking for you! Much like shredded buffalo chicken and ranch chicken, which we also love for meal prepping.
Why This Recipe Works
- Set-it and forget it. Until adding the broccoli and cheese toward the end, everything gets added to the slow cooker and you don't have to do anything while it cooks!
- We use rotisserie chicken to make it extra easy and flavor.
- Using parboiled rice keeps the rice from turning mushy or becoming overcooked. Adding the broccoli near the end also prevents it from becoming overcooked and too soft.
- It's made quickly in just 3-4 hours so it's great as a last minute dinner.
Ingredients
- Parboiled white rice: don't substitute without another type of rice, as the amount of liquid and cooking time may change.
- Rotisserie chicken: shredded or diced. This adds a lot of flavor! You can use my slow cooker whole chicken or a store bought one.
- Sweet onions and garlic: you can use roasted garlic and caramelized onions for extra flavor.
- Chicken broth: or water and chicken bouillon.
- Cream of chicken soup: or substitute with cream of celery or cream of mushroom.
- Sharp cheddar cheese
- Broccoli florets
Step-By-Step Instructions
STEP 1: Add parboiled white rice, diced sweet onions, minced garlic, butter, salt, black pepper and chicken broth to the slow cooker. Stir to cover the rice in the broth. Add shredded rotisserie chicken and cream of chicken soup.
STEP 2: Set to low for 3 hours.
STEP 3: When the time is up, remove the lid and stir in shredded cheddar cheese and broccoli florets. Cook on low for an additional hour, or until broccoli florets are softened.
Transfer to a serving dish immediately and enjoy!
Chef's Tips
- Once the broccoli is added, cooking time varies depending on how tender or crisp you'd like the broccoli. Cook the dish for another 30-60 minutes, testing the broccoli at the 30 minute mark.
- Remove the casserole from the hot crockpot and to a serving dish immediately once it's done cooking. This will prevent the rice and broccoli from overcooking.
How To Store
Store slow cooker chicken rice and broccoli casserole in a covered container in the refrigerator for up to 5 days. It can be frozen for up to 6 months and thawed in the fridge overnight.
Recipe FAQs
Yes. To use boneless raw chicken, dice it into bite-sized pieces and cook for low on 3-4 hours or until the chicken reaches at least 165 degrees Fahrenheit.
Yes. Keep in mind that frozen broccoli will become much softer in the slow cooker and release a fair amount of water into the dish. It may need less cook time than fresh broccoli.
I recommend cooking this dish on low. If you must use the high setting, cut the cook time in half.
