Making baby potatoes in a slow cooker is an easy and hands-off way to prepare this simple and versatile side dish. These delicious potatoes pair well with almost any main dish, including chicken and steak dinners, baked fish, lamb roasts and pork meals.
Place the cut baby potatoes into the slow cooker. Toss with extra virgin olive oil, dried rosemary, dried parsley, garlic powder, paprika, salt and black pepper.
Set to HIGH for 2-3 hours, until the potatoes are fork tender. If possible toss halfway through cooking. *Begin checking the potatoes for doneness at the 2 hour mark.
Optional: Transfer the potatoes to a serving dish and broil for 3-5 minutes on high to give the potatoes a crispy exterior.
