These are some seriously loaded nachos!
They may be loaded with warm, melted cheese but they are also packed with nutritious vegetables and legumes.
Healthy nachos? I'll take it!
- Make them even more loaded by adding jalapenos, red onions, and avocado.
- Replace the taco-seasoned beef with chicken, or use them both. The more the merrier!
- I don't layer on the tomatoes before cooking because we like our tomatoes cold. But cook yours if you'd like.
Step-By-Step Directions
Making nachos is as simple as layering your ingredients on a bed of chips on the sheet pan.
For big parties or large families, use an oversized baking sheet. For smaller crowds, a standard baking sheet and cutting the recipe in half should do it.
- In a large skillet, brown the beef for 5-7 minutes, crumbling it as it cooks. Then drain the fat, add taco seasoning and water according to the package, and cook for 5 minutes longer.
- Layer a large lightly oiled sheet pan with tortilla chips, ⅔ of the cheese, diced peppers, black beans, and corn. Top with the taco-seasoned beef and the remaining cheese.
- Bake for 8-10 minutes, until heated through and the cheese has melted.
- Remove from the oven and top with diced tomatoes, cilantro and lettuce.
Serving
Serve nachos with sour cream, salsa, and guacamole for ultimate party food status.
It's unlikely you'll have any left to store. But if you do, transfer them to a small plate and keep in the fridge wrapped tightly with plastic.
Reheat in the microwave for a quick 45 second warm up or in the toaster for a slow 5 minute warm. Remove as much lettuce as you can before reheating.

- 2 bags tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup shredded Mexican style cheese
- 1 ½ lbs ground beef
- 2 taco seasoning packets
- 1 bell pepper, diced
- 1 ½ cups frozen or canned corn
- 1 ½ cups black beans
- 3 tomatoes, diced
- ½ cup cilantro, torn
- 3 cups lettuce, chopped
Instructions
- Preheat oven to 400°. Lightly spray a baking sheet with oil.
- In a large skillet, brown ground beef on medium heat for 5 minutes, breaking into crumbles as it cooks. Drain the fat and add taco seasoning packets and water according the package. Simmer for 5 minutes more and remove from heat.
- Layer the sheet pan with tortilla chips, ⅔ of the cheese, diced peppers, black beans, and corn. Top with the taco-seasoned beef and the remaining cheese.
- Bake for 8-10 minutes, until heated through and the cheese has melted.
