Buffalo Cauliflower Tacos are a wholesome, refreshing alternative to traditional cheese and meat-filled tacos. Tortilla shells are packed with roasted cauliflower that's been tossed in buffalo sauce, then stuffed with fresh red cabbage, peppers, onions, and lettuce. Top them with blue cheese crumbles, blue cheese dressing, or mozzarella cheese to complete the meal.

You're going to love buffalo cauliflower tacos as a vegetarian change from chicken or beef tacos. We love creating wholesome variations of our favorite traditional recipes, like a Mexican street corn stuffed taco, Mediterranean quesadilla or Mediterranean pizza. Our white pasta sauce made with milk instead of heavy cream is a family favorite.

Love your chicken tacos but want a change? Stuff them with this slow cooker buffalo chicken.

Ingredients

To make buffalo cauliflower tacos you need cauliflower florets, your favorite buffalo sauce, bell peppers, red cabbage, romaine lettuce, red onions, blue cheese and mozzarella cheese, and tortilla shells. Or use your favorite toppings for tacos. Caramelized sweet onions and cilantro are great, too.

Instructions

Buffalo cauliflower tacos are incredibly easy to make and take about 30 minutes, with minimal cooking and preparation.

  1. Line a baking sheet with parchment paper. Chop the cauliflower into small ½ inch florets. Spread in 1 layer on the baking sheet and cook for 20 minutes at 400 degrees Fahrenheit. Remove from the oven and toss with the buffalo sauce.
  2. While the cauliflower cooks, prepare the toppings. Cut the bell pepper into thin strips, dice the onion, and chop the lettuce.
  3. Assemble the tacos. Stuff each tortilla with lettuce, roasted cauliflower, bell pepper strips, red cabbage and onions. Top with blue cheese (or mozzarella) and drizzle with extra buffalo sauce if desired.

They are delicious served with a side of seasoned black beans.

How To Store

Store the roasted buffalo cauliflower in an airtight container in the fridge for up to 5 days, separate from the other toppings. Fresh vegetable toppings and cheese should also be stored in the fridge. Assemble the tacos immediately before serving.
