Ingredients
To make garlic lime shrimp and rice, you need:
- basmati rice (or other rice)
- broccoli chopped into small pieces
- peeled and deveined shrimp, fresh or frozen
- olive oil
- butter
- minced garlic
- lime and lemon juice
- salt
Tips
- Don't marinate the shrimp for more than 30 minutes. The acid in the lemon and lime juice will begin to breakdown the shrimp if you marinate it any longer than that. I've written this recipe to marinate the shrimp only for the time it takes to saute the broccoli. But you could marinate it for a little longer if you'd like.
- Always remember to boil the extra marinade for 2 minutes before pouring over the rice bowls, since it will have had the raw shrimp in it.
- Cover the water for the rice as you bring it to a boil so it takes less time.
- While you can use any rice, I find basmati is the best because it takes half the time as traditional white rice, is not sticky, and smells amazing. Basmati is the longest grain rice so it lengthens as it cooks and keeps a light and fluffy texture.
- Use a bag of frozen broccoli florets or steamable broccoli. If using steamable broccoli, cook while the rice cooks and then follow the recipe as written, but saute it for just 2 minutes to crisp it up a bit.
- Instead of using part lime and part lemon juice for the marinade, use all lime juice or all lemon juice.
- If you aren't serving this to kids, a dash of red pepper flakes would be delicious!
To make these garlic lime shrimp bowls as efficiently as possible, start by boiling the water for the rice. As you wait for the water to boil, mix the marinade ingredients and marinade the shrimp. Then chop the broccoli.

How to Store
Shrimp does not keep well for long in the fridge. You'll want to eat it within a day or so. The rice and broccoli keep longer, for up to 1 week. If you have extra rice (which we always seem to have!), use it for other recipes that require cooked rice.
Leftover rice is used in this Instant Pot stuffed pepper soup. A fried rice or meal prepping would also be great
