Make Ahead Soups + Stews
Make them once and eat them all week! That's my motto when it comes to cooking a delicious pot of soup. I make big batches, and my family is fed for days...and leftovers end up in the freezer so we can grab and go on those really busy nights (or lazy days).
My soups and stews are mostly made in one pot, whether it's on the stove, in the slow cooker or in the pressure cooker. That means easy cleanup! And they're effortless to put together, with most of the work being preparation. Then just dump everything into the pot and let it simmer away. The house will smell fantastic as it does.
Moroccan chicken stew is a new favorite, and Instant Pot beef barley is a classic we always have stored away.
