This delicious and hearty soup makes a cold night comforting. Chicken and corn soup is easy to put together and is family-friendly. It makes a great lunch, dinner or appetizer soup. It's the crockpot version of my Instant Pot chicken rice soup, that is just as easy if you prefer to use your pressure cooker.

Ingredients

  • 4 stalks of celery 
  • 2 large carrots 
  • ½ cup sweet onion (or roasted onions)
  • 6 cloves garlic (or use roasted garlic)
  • 12 cups chicken broth
  • 3 tbsp fresh parsley (or 1 tablespoon dried parsley)
  • 1 tbsp fresh rosemary (or 1 tablespoon dried rosemary)
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • ⅛ tsp saffron
  • 1 ½ cup parboiled white rice (uncooked)
  • 3 cups rotisserie chicken
  • 3 scallions

Step-By-Step Instructions

  1. Add celery, carrots, sweet onion, garlic, 10 cups of chicken broth and all seasonings to the slow cooker. Set to HIGH for 6 hours or LOW for 8 hours.
  2. With 2 hours remaining, add the parboiled rice and remaining 2 cups of broth.
  3. When cooking time is done, add rotisserie chicken pieces and scallions. Stir, taste and season with additional salt and pepper if desired.

Chef's Tips

  1. You'll likely need extra broth. As the soup sits, the rice will continue to absorb broth, so you'll need to add more before serving for a brothier soup.
  2. Add other vegetables for a variation. Peas, green beans, corn, spinach and kale are all great additions.

How To Store

Store chicken and rice soup in the fridge for up to 5 days for optimal quality. Reheat in the microwave or on the stovetop. To freeze, place the soup in freezer safe storage bags and thaw in the fridge overnight.

Recipe FAQs

Can I Use Cooked Rice?

Yes, you can use cooked rice. Add cooked rice to soup once it's done cooking, when you add the rotisserie chicken.

Can I Use raw chicken breasts or tenders?

Yes, if you want to use fresh, uncooked chicken, dice it up into pieces then add to the slow cooker in the very beginning with the other ingredients.
