If you plan on making buffalo chicken dip this winter for New Year's, football game days or the Super Bowl, it's likely you'll be making a big batch. Repurpose some of the buffalo dip to make these quick and easy Buffalo Chicken Bites. No buffalo chicken dip? Use this easy shredded buffalo chicken instead! This recipe is very similar to these pizza poppers, except without the pepperoni and cheese.

Buffalo dip is wrapped in pizza dough and brushed with an herbed butter sauce. Baked in the oven for 12 minutes, they turn into a soft and scrumptious buffalo bite. They make a delicious snack or appetizer. If you love a little spice to your recipes, try these creamy jalapeño poppers or salsa roja!

For other appetizers or finger-foods, homemade garlic knots, air fried onion petals, cheesy pepperoni pizza sticks and bacon wrapped scallops are all wonderful recipes.

Ingredients

To make buffalo chicken bites you need:

  • Leftover buffalo chicken dip or use shredded buffalo chicken
  • Pizza dough: a homemade thick crust, thin crust or New York style crust, or a store bought pizza dough package.
  • Butter
  • Seasonings: salt, parsley, and garlic powder
  • Mozzarella cheese: if using shredded buffalo chicken, add mozzarella cheese to the buffalo chicken bites filling.

Instructions

There are 3 steps to making buffalo chicken bites.

Oven Method

  1. Preheat the oven to 450℉ and grease a baking sheet with olive oil or butter.
  2. Roll a package of pizza dough onto the baking sheet and cut into 24 squares.
  3. Scoop 1 tablespoon of buffalo dip or buffalo chicken onto each dough square. Fold the opposite corners to each other so they overlap. Press the seams together, flip over so the seam is down, and shape gently into a ball.
  4. Combine melted butter, salt, garlic powder, and parsley in a small bowl. Brush the sauce onto each dough ball. Bake for 10-12 minutes in the preheated oven, or until golden brown. Serve with ranch or blue cheese for dipping.
