- Sweet corn: as written the recipe calls for 2 cans of sweet corn, but you can use fresh corn kernels cut off the cob or a bag of frozen corn.

- Celery
- Potatoes: use waxy potatoes for the best results, such as baby potatoes.
- Onion: sweet onion gives this soup the best flavor but yellow onion works too.
- Garlic: we're using fresh garlic cloves but you can also use garlic powder instead. For extra garlicky flavor use roasted garlic cloves.
- Chicken broth or chicken stock
- Seasonings: thyme, parsley, chili powder, salt and black pepper.
- Bay leaf
Instructions
STEP 1: Add to the slow cooker diced rotisserie chicken, cans of sweet corn and 1 cup of the liquid, diced potato, chopped carrots, chopped celery, diced sweet onion, minced garlic cloves, chicken broth, thyme, parsley, chili powder, salt, pepper and bay leaf. Stir and cover.
STEP 2: Set to LOW for 6 hours or HIGH for 4 hours.
Serve warm topped with oyster crackers, croutons, or other preferred toppings.

- Use a store bought rotisserie chicken or homemade whole seasoned chicken that's been diced or shredded into small pieces for the easiest way to prepare this soup. You can use 1 pound of raw boneless skinless chicken breasts if you prefer. Dice the fresh chicken into small pieces and add to the crockpot with all ingredients.
- For potatoes that stand up to long cooking and keep their shape and tender texture in soup, use waxy potatoes such as baby potatoes, red potatoes or fingerlings.
Variations
- Make creamy chicken corn soup by replacing half of the chicken broth with heavy cream. You can also add cream cheese or a cup or two of shredded cheddar, monterey jack, colby jack or asiago cheese once the soup has finished cooking to make it extra creamy.
- Use fresh corn cut straight off the cobs. You can cut the corn kernels off the cob prior to cooking or add the entire cob to the soup as it cooks. The latter will create a more flavorful, sweet soup and is how I make this creamy Instant Pot corn chowder.
- Make it even heartier by adding egg noodles during the last 20 minutes of cooking time.
