I just made this recipe substituting the sugar with a medium ripe banana and adding cinnamon to taste. I didn't realize we were out of maple syrup, so I made a butter and honey drizzle. I really like this recipe calling for whole eggs rather than just egg whites. In this economy, I cringe at the thought of food waste, and besides, egg yolks are loaded with essential nutrients.
