One of my favorite times to put this recipe together is on holiday mornings, when everyone is busy and we can come by the kitchen, grab a sandwich and go.
This bacon, egg and cheese crescent breakfast ring can be prepared the night before and baked in the morning, making it a simple choice for those busy mornings. This tasty bacon, egg and cheese breakfast ring requires classic American breakfast ingredients:
- Crescent roll dough
- Bacon: I make mine in the air fryer.
- Eggs
- Cheddar cheese
- Everything bagel seasoning blend
- Salt and pepper
- Milk

Step-By-Step Instructions
Oven Method
STEP 1: Cook the bacon in a frying pan until crispy, flipping halfway through. Alternatively, bake in the oven at 375 degrees Fahrenheit for 12-15 minutes or in the air fryer on 400 degrees Fahrenheit for 6-8 minutes.
STEP 2: While the bacon cooks, scramble the eggs on a griddle or frying pan. Season with salt and freshly ground black pepper as desired.
STEP 3: Unpackage the crescent roll dough and arrange triangle pieces in a circle on a baking sheet lined with parchment paper, with the short ends in the inner circle touching (see picture below). Spread the dough pieces gently to form larger triangles if necessary. It should look like a star.
STEP 4: Sprinkle inner half of each crescent triangle with cheddar cheese. Break the cooked bacon slices into 2 pieces and layer 2 half slices over the cheese. Add equal portions of scrambled eggs and a little more cheese.
STEP 5: Fold the tip of the crescent triangles over the filling and tuck underneath. Brush the top of the dough lightly with milk and sprinkle with the everything bagel seasoning and more cheese, if desired.
STEP 6: Bake at 375°F for 10 minutes, or until top is golden brown.
Air Fryer Method
Follow the steps above for cooking the bacon and scrambled eggs. In oven style air fryers, you can make the ring following the instructions above. Air fry at 375°F for 6-8 minutes. In basket style air fryers, take 2 crescent pieces and form a rectangle. Place bacon, eggs, and cheese on one side and fold the other side over. Seal the seams, brush with milk and sprinkle with everything bagel seasoning. Air fry sandwiches for 6-8 minutes.
Variations
There are many ways to change a breakfast crescent ring to satisfy your food preferences or dietary restrictions. A few suggestions are:
- Change the meat: use turkey bacon, sausage or pork roll.
- Add greens: spinach, arugula, diced broccoli and diced asparagus are great healthy additions to breakfast sandwiches.
- Add some vegetables: like avocado, tomato or peppers.
- Different cheese: mozzarella cheese, swiss cheese, feta cheese and provolone are great too.
- Dairy free: use dairy free cheese and egg white to brush the dough.
How To Prepare Ahead Of Time
To prepare this recipe ahead of time, complete steps 1 through 5 and store in the fridge wrapped in plastic wrap or foil. Cook when ready to serve. An uncooked crescent ring can also be frozen for up to 3 months, then thawed in the fridge and baked as the recipe instructs.
How To Store
Store leftovers in the fridge for up to 5 days. It can be frozen for up to 3 months. Defrost overnight in the fridge and then toast on 350 degrees Fahrenheit, until the middle is warm. You can also warm them in the microwave, but the toaster will crisp the sandwich up.

I’ve made this a handful of times and it never disappoints! I have a large group retreat coming up and I was wondering about making ahead and freezing. Do you think it would work better to freeze before baking (then thaw in the fridge overnight before baking fresh) or bake to completion then freeze and reheat per your oven instructions? Thanks!

Yes! You can follow the recipe exactly- just make sure to wrap it with plastic while in the fridge so that the crescent dough does not harden. Brush with the milk just prior to cooking too, not before putting in the fridge.
