This is also a great breakfast to prepare overnight (just add the milk in the morning). It reheats really well, too, or can be eaten cold like you would eat chilled overnight oats.

To make blueberry baked oatmeal, you need:

- Fresh blueberries:
- Dairy-free chocolate chips: or regular chocolate chips if you don't mind the dairy.
- Almond milk: I use unsweetened vanilla, but you can use plain almond milk or oat milk.
- Flaxseed plus water to make flax eggs
- Coconut oil
- Shredded sweetened coconut flakes
- Pure maple syrup
- Cinnamon
- Vanilla extract
*I prefer using almond milk in most of my recipes, especially vanilla milk which I use in these popular vanilla almond milk pancakes. But, you can use any type of milk.
Instructions
Blueberry baked oatmeal is made in 4 easy steps.
STEP 1: Preheat the oven to 375ยฐ Fahrenheit and grease a 2 qt glass baking dish with a little coconut oil. Combine 2 tablespoon ground flaxseed and 6 tablespoon water. Let chill for 15 minutes while preparing the oatmeal.
STEP 2: Reserve half of theย ยฝ cup sweetened coconut flakes.ย In a large mixing bowl. combineย 2 ยฝ cups almond milk,ย โ cup pure maple syrup,ย 3 cups old fashioned oats,ย 2 cups fresh blueberries,ย ยฝ cup chocolate chips,ย 1 teaspoon ground cinnamon,ย 2 teaspoon vanilla extract,ย 1 ยฝ teaspoon baking powderย andย ยฝ teaspoon salt. Add the flaxseed/water mixture. Mix well.
STEP 3: Pour the oatmeal mixture into the greased baking dish. Top with the reserved coconut flakes and drizzle with 3 tablespoon coconut oil.
STEP 4: Bake for 35-40 minutes, or until the center slightly wiggles. Let cool for 10 minutes before serving.
To serve, you can top with extra blueberries or shredded coconut or simply eat it just as it is. It's also fantastic when served with a little homemade yogurt mixed in.
