This Frozen Piña Colada recipe is one of my favorite summer cocktails. It's made with just the right ratio of pineapple juice, rum and coconut cream to make a creamy, blended drink in your own kitchen- but it'll make you feel like you're on a tropical island vacation! It's sweet, satisfying and can even be turned into a popsicle treat.
My recipe is made with only 3 ingredients: rum, pineapple and coconut cream. It takes just minutes in a blender. I make my frozen strawberry margaritas the same way, and they're both the cocktails you'll find me sipping on all summer long!
I enjoy piña coladas with my grilled dinners on the deck outside on warm summer evenings. They're great with grilled lemon-lime chicken, a summer berry salad, or with pineapple mango salsa and tortilla chips.

- Yield: 2 large 14 ounce piña coladas, or 4 small 7 oz piña coladas.
- Proof: about 13% ABV
Ingredients
- White rum: don't use dark or spiced rum, unless you'd prefer that specific flavor over the fruity coconut and pineapple.
- Cream of coconut: In a pinch, you can replace the coconut cream with full fat coconut milk. But you will lose the thickness and richness that comes with coconut cream.
- Pineapple juice
- For garnishing: maraschino cherries and fresh pineapple slices

Making A Perfect Piña Colada
- Use a good quality white rum. While top shelf isn't necessary, a good quality rum will make your cocktail taste the best it can be.
- Add a handful of fresh or frozen pineapple to the drink for added flavor and thickness.
- To keep frozen cocktails cold, chill the glasses in the fridge for 15-30 minutes before serving.
- Blend as close to serving as possible. Store extras in the fridge and stir well or re-blend right before enjoying to keep it creamy and thick.

- Blend on high speed for 30-60 seconds or until ice is completely crushed and drink is thick and creamy.
- Pour into chilled glasses and serve garnished with pineapple slices and a maraschino cherry.

What's The Best Type Of Rum To Use?
The best rum for a pińa colada is a clear or white rum. White rum is often used to create cocktails where a bold rum flavor is not necessary. In the piña colada, pineapple and coconut are the stars of the show so you don't want to overpower those fruity flavors by using a dark or spiced rum.
Can I Use Frozen Pineapple Instead Of Ice?
Absolutely! This is a great idea to make yours with even more pineapple flavor.
How Can I Make It Thicker?
The key to a thick and creamy frozen cocktail is first not to over blend it. Pulse the blender for 30-60 seconds. If it's smooth but not thick enough for how you like it, add more cream or fresh or frozen pineapple. Adding more ice will make it thinner.
