- 16 small corn tortillas
- 16 ounce can can of refried beans
- 2 ounces cream cheese
- 2 tablespoons salsa - try my favorite homemade salsa roja
- ½ tablespoon taco seasoning
- 1 cup shredded cheddar cheese or Mexican cheese blend
Toppings
- Sour cream
- Guacamole
- Salsa Roja
- Salsa Verde
- Sliced jalapenos
- Diced tomatoes
- Sliced avocado
- Shredded lettuce
- Crumbled queso fresco or cotija cheese
- A squeeze of lime juice

Step-By-Step Instructions
- In a saucepan over medium heat, cook the refried beans, cream cheese, salsa and taco seasoning. Stir constantly until completely smooth, about 3-5 minutes.
- In a small pan, warm the tortillas over low heat on each side for about 30 seconds.
- Add 2 tablespoons of bean filling to the center of each tortilla. Sprinkle 1 tablespoon of shredded cheese on top of the bean mixture, roll up, and place on a plate until you have enough for one layer in the air fryer.
- Preheat the air fryer to 400℉, then place the taquitos in the basket or on the tray in a single layer. Spray lightly with oil or a cooking spray and air fry for 6-8 minutes, flipping halfway through, and until golden brown.
- Allow to cool slightly while making the next batch. Add your favorite toppings and enjoy.

Store in an airtight container in the fridge for 3-4 days and reheat in the air fryer at 390℉ for 3-5 minutes.
