Ingredients

  • 16 small corn tortillas
  • 16 ounce can can of refried beans
  • 2 ounces cream cheese
  • 2 tablespoons salsa - try my favorite homemade salsa roja
  • ½ tablespoon taco seasoning
  • 1 cup shredded cheddar cheese or Mexican cheese blend

Toppings

  • Sour cream
  • Guacamole
  • Salsa Roja
  • Salsa Verde
  • Sliced jalapenos
  • Diced tomatoes
  • Sliced avocado
  • Shredded lettuce
  • Crumbled queso fresco or cotija cheese
  • A squeeze of lime juice
  • Fresh cilantro 

Step-By-Step Instructions

  1. In a saucepan over medium heat, cook the refried beans, cream cheese, salsa and taco seasoning. Stir constantly until completely smooth, about 3-5 minutes.
  2. In a small pan, warm the tortillas over low heat on each side for about 30 seconds.
  3. Add 2 tablespoons of bean filling to the center of each tortilla. Sprinkle 1 tablespoon of shredded cheese on top of the bean mixture, roll up, and place on a plate until you have enough for one layer in the air fryer.
  4. Preheat the  air fryer to 400℉, then place the taquitos in the basket or on the tray in a single layer. Spray lightly with oil or a cooking spray and air fry for 6-8 minutes, flipping halfway through, and until golden brown.
  5. Allow to cool slightly while making the next batch. Add your favorite toppings and enjoy.

Chef's Tips

  • Don’t skip the step for warming up the tortillas before filling them or the tortillas may with rip.
  • Be sure to flip the taquitos halfway through so they cook evenly.

How To Store

Refried bean taquitos are best enjoyed fresh from the air fryer on the first day they are made. If planning to save for another day, do not add toppings. Store in an airtight container in the fridge for 3-4 days and reheat in the air fryer at 390℉ for 3-5 minutes. They can be frozen for up to 6 months, wrapped in plastic wrap and stored in a freezer safe storage container.
