The crockpot is one an item that every homecook, busy parent, and not-so-great-at-cooking folk need to have. I have a Crock-Pot that has lasted 15 years so far, and it's listed on Amazon for just $45.00. For all the use I've gotten out of my crockpot, I'd say that is an investment well worth it.
It's a must for my crockpot recipes to include minimal chopping, peeling, and grating during preparation. The more ingredients we can take from the pantry and fridge and dump straight into the crockpot, the better.
This easy chicken parmesan soup recipe is one of these recipes. The only preparation required is slicing an onion and chopping garlic cloves.
Ingredients
To make crockpot chicken parmesan soup you need:
- large chicken breasts (fresh or frozen)
- can of crushed tomatoes
- can of diced tomatoes
- chicken broth
- diced onion
- minced garlic
- Italian seasoning
- grated parmesan cheese
- short pasta, such as shells, cavatappi, elbows
- salt + pepper
- fresh mozzarella or shredded mozzarella
- Italian croutons
You can use fresh or frozen chicken breasts. Either one will both fully cook in 6 hours time.
For the tomatoes, use your favorite brand of crushed tomatoes and Italian style diced tomatoes.
You can also use premade chicken broth, chicken stock, or chicken bouillon cubes and water. The difference in taste will not be enough to make a significant impact on the outcome.
Additionally, you have a few options for the type of cheese you choose. This chicken parmesan soup uses 2 kinds of parmesan: grated and shredded. The grated parmesan is added to the broth and the shredded is used to top the soup for serving. Make sure not to use shredded parmesan in the broth because it doesn't melt well and becomes stringy.
The mozzarella cheese is specifically for serving and is not added to the broth, as it also becomes stringy when melted. You can use fresh or shredded mozzarella, or a combination of both.
I like to top my chicken parmesan soup with croutons, fresh mozzarella cubes and shredded parmesan. My husband prefers to top his with croutons and shredded parmesan and shredded mozzarella. He also like to broil it for a few minutes in the toaster to melt the cheese on the croutons.

- Cut the chicken into small kid-sized pieces
- Use petite diced tomatoes
- Choose a short pasta they find exciting, like wagon wheels, shells or bowties

- Add the chicken breasts, onion, garlic, diced tomatoes, crushed tomatoes, Italian seasoning, chicken broth, salt, pepper, and grated parmesan cheese to the slow cooker. Give it a good stir and set to high for 6 hours.
- When there are 30 minutes remaining, remove the chicken breasts and cut into cubes or shred with a fork. Return to the soup.
- Add the pasta shells and cook for the remaining 30 minutes.
Top each bowl with croutons, fresh mozzarella cubes or pearls, and shredded parmesan cheese.
Alternatively, top the bowls with croutons and cheese, and broil for 2-3 minutes to melt the cheese until bubbly.

- 8 oz pasta shells
Instructions
- Add chicken breasts, onion, garlic, diced tomatoes, crushed tomatoes, Italian seasoning, chicken broth, salt, pepper, and grated parmesan cheese to the slow cooker. Set to high for 6 hours.
- With 30 minutes left, remove the chicken breasts and cut into cubes or shred. Return to the soup. Add the pasta shells and cook for the remaining time.
- To serve, top with croutons, shredded parmesan and fresh mozzarella. Alternatively, toast the croutons with the cheese for cheesy croutons.

Chicken parm soup keeps well in the fridge for around 1 week. The pasta my begin to break down before then, but it won't change the flavor of the soup.
This soup is also freezer-friendly and keeps well for around 6 months. Any longer than that and the pasta will turn to mush when defrosting.

Just wondering IF you were to add additional veggies to this soup, which ones you might add so as not to alter the flavor too much? Would love to hear. It looks amazing as is, but love to sneak in extra vegetables with any soup recipe.

That's a good idea! I am thinking chopped spinach, cut green beans, carrots, and maybe a bell pepper would be great additions without changing the flavor.
