Our Apple Pie Pancakes are sweet, delicious and fluffy, just like these protein pancakes, oat milk pancakes and almond milk pancakes. They make a great autumn breakfast topped with apple pie filling, sliced apples or peaches, drizzled with maple syrup and sprinkled with brown sugar.
My girls are pretty picky when it comes to eating their fruits and vegetables. They're sensitive to texture and temperature, so being able to sneak fresh seasonal apples into their pancakes without them noticing makes me happy! They also love apple hand pies and peach hand pies.

This recipe yields 10 pancakes that are about 3 inches in diameter.
- 1 cup flour
- 2 tsp baking powder
- 1 ½ tbsp brown sugar (or coconut sugar)
- ¼ tsp salt
- ¼ tsp ground cinnamon
- ⅛ tsp ground nutmeg
- 1 cup milk (dairy or non-dairy)
- 2 tbsp melted butter
- 1 large egg
- 1 tsp vanilla extract
- 1 cup shredded apples (there's no need to peel them!)
Kristina's Tips
- There's no need to peel the apples! The skins become unrecognizable when shredded and cooked.
- You can use a cheese grater to shred the apples. It's even easier to chop them up and put them into a food processor and process until shredded.
How To Make Apple Pancakes
- In a large mixing bowl combine the flour, baking powder, salt, ground cinnamon, ground nutmeg and brown sugar.
- Make a hole in the center of the dry ingredients and add milk, melted butter, vanilla extract, eggs and shredded apple. Mix with a whisk until smooth.
- Melt 1 tablespoon of butter over medium heat on a griddle or frying pan. Fill the pancake batter dispenser or soup ladle with batter and pour onto the buttered griddle in batches.
- When bubbles begin to form, flip pancakes with a spatula (about 2 minutes). Cook on the other side for about 2 more minutes or until both sides are golden brown.
- Serve with your choice of toppings, such as Greek yogurt, apple pie filling, diced apples, maple syrup, peaches, sliced bananas, blueberries, strawberries, raspberries, etc.

How To Store
Store at room temperature for 2 days or in the fridge for up to 5 days in an airtight container. They are freezer-friendly for around 6 months. Wrap tightly in plastic wrap or use a freezer storage bag. Defrost overnight at room temperature or in the microwave.
