It's so easy to make peanut clusters in a crockpot. In fact, this is one of my new favorite ways to melt chocolate melting wafers. I find it tedious to melt wafers in the microwave - stopping and going, stopping and going, and on and on until the wafers are melted.
But in a crockpot, melting wafers take about 20 minutes to melt with just a little stirring. The chocolate melts evenly and is creamy without any lumps. You can toss in peanuts, mixed nuts, pretzels, and other fun foods that you want to coat in your chocolate. Then scoop them out in clusters and let harden for a few minutes before enjoying a decadent chocolate covered treat.
Crockpot peanut chocolate clusters are a great holiday treat added to a hot cocoa charcuterie board with crockpot pretzel candy or as a dessert along with a hot cup of peppermint hot chocolate, Instant Pot hot chocolate or slow cooker hot cocoa.
This recipe is simple, delicious and is sure to be a hit for the holiday season. You'll find chocolate peanut clusters on our dessert table every Christmas, along with saltine cracker candy.
Ingredients
- Chocolate melting wafers: Ghirardelli dark chocolate melting wafers are my favorite, but any brand and flavor will work.
- Mixed nuts: such as almonds, peanuts, cashews, walnuts, pecans, hazelnuts, or Brazil nuts.
Instructions
- Add the melting wafers to the crockpot in an even layer. Cover and set to low for 30 minutes.
- Stir chocolate halfway through at the 15 minute mark. If not fully melted, continue to cook in 5 minute increments, stirring between intervals.
- Once melted and smooth, turn off the crockpot and remove the ceramic liner to another heat proof surface. Add the mixed nuts to the melted chocolate and stir until the nuts are evenly coated in the melted chocolate.
- Use a spoon to scoop 1-2 tablespoons of the chocolate covered nuts to a parchment lined baking sheet (or silicone baking cups). Let harden for 10-15 minutes, then transfer to an airtight container.
How To Store
Store crockpot peanut chocolate clusters in an airtight container at room temperature for 7-10 days. For longer storage, keep in the fridge for 2-3 weeks. They can be frozen in freezer safe storage bags for about 6 months.
Tips from the Chef
- The peanut chocolate clusters can harden at room temperature or more quickly in the fridge.
- For evenly shaped clusters, scoop them into mini muffin tins or silicone baking cups.
