Instructions
Add the melting wafers to the crockpot in an even layer. Cover and set to low for 30 minutes.
Stir chocolate halfway through. If not fully melted, continue to cook in 5 minute increments, stirring between intervals.
Turn off the crockpot and remove the ceramic liner to another heatproof surface. Add the mixed nuts to the melted chocolate and stir until the nuts are evenly coated in the melted chocolate.
Use a spoon to scoop 1-2 tablespoons of the chocolate covered nuts to a parchment lined baking sheet (or silicone baking cups). Let harden for 10-15 minutes, then transfer to an airtight container.
Notes
Storing: store crockpot peanut chocolate clusters in an airtight container at room temperature for 7-10 days. For longer storage, keep in the fridge for 2-3 weeks. They can be frozen in freezer safe storage bags for about 6 months.
