Romaine lettuce: loaded with vitamin C, folate, and calcium
Beef: full of iron, zinc, and protein
Black beans: a powerhouse of vitamins and minerals like protein, fiber, folate, magnesium, iron, thiamine
Avocado: my all time favorite healthy fat that's also rich in fiber
Corn: plenty of protein, fiber, vitamin C

You'll also need ranch dressing (or another creamy favorite), tortilla strips, and a taco seasoning packet.

You can make this healthy taco salad recipe kid-friendly by turning it into....taco salad nachos. Unless your kids like salad.
To turn your taco salad into taco salad nachos, scoop the beans, corn, tomatoes, and beef onto regular tortilla chips and top with cheddar cheese.
Bake at 350 for about 10 minutes.
Optional: top with avocado, lettuce, and drizzle with a little ranch dressing.

First, cook the beef in a large skillet according to the taco seasoning directions. This typically means browning the beef, draining it, adding water and seasoning, and then simmering it for about 5 minutes. This whole process takes about 15 minutes.
Second (and while the beef cooks), chop the lettuce, tomato and avocado. Prepare the remaining ingredients by measuring out the corn and black beans.
Last, combine the lettuce, beef, avocado, tomato, corn and black beans. Divide between 2 bowls and toss with ranch dressing and tortilla strips.

- 2 heads romaine lettuce
- 1 cup corn
- 1 avocado
- 1 cup beans
- 1 tomato
- tortilla chip strips (or broken tortillas)

- In a large skillet, cook the beef and season with taco packet according to the package instructions.
- While beef cooks, chop the lettuce and dice tomato and avocado. Mix lettuce, avocado, beans, corn, and tomato.
- Divide between 2 bowls and top with beef and tortilla strips. Serve with ranch dressing.
