Healthy Carrot Raisin Muffins
These muffins are so tasty that you won't even know they are sweetened with just honey and applesauce. They are a fantastic way to get your picky kids to eat a veggie, plus they freeze great for an easy snack or breakfast treat throughout the week!
Servings: 18 mini muffins
- 1 cup whole wheat flour
- 1 cup oats
- 2 tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 2 eggs, beaten
- 1 tsp vanilla extract
- ⅓ cup honey
- ¾ cup applesauce
- 1 ½ cup grated carrots
- ¼ cup raisins
Preheat oven to 400° and spray a mini muffin tin with cooking spray or grease with butter.
In a large bowl, mix flour, oats, salt, baking powder, cinnamon, and nutmeg.
Make a well in the center and add eggs, vanilla, and honey. Mix together the dry and wet ingredients until just combined.
Add applesauce, carrots, and raisins. Mix until just combined.
Pour batter into the muffin tins, filling each hole nearly to the top.
Bake for 15-20 minutes, until toothpick in the center comes out clean.
