Healthy Carrot Raisin Muffins

These muffins are so tasty that you won't even know they are sweetened with just honey and applesauce. They are a fantastic way to get your picky kids to eat a veggie, plus they freeze great for an easy snack or breakfast treat throughout the week!

Ingredients

  • 1 cup whole wheat flour
  • 1 cup oats
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • cup honey
  • ¾ cup applesauce
  • 1 ½ cup grated carrots
  • ¼ cup raisins

Instructions

  • Preheat oven to 400° and spray a mini muffin tin with cooking spray or grease with butter.
  • In a large bowl, mix flour, oats, salt, baking powder, cinnamon, and nutmeg.
  • Make a well in the center and add eggs, vanilla, and honey. Mix together the dry and wet ingredients until just combined.
  • Add applesauce, carrots, and raisins. Mix until just combined.
  • Pour batter into the muffin tins, filling each hole nearly to the top.
  • Bake for 15-20 minutes, until toothpick in the center comes out clean.
