In a small bowl combine the chili powder, garlic powder, onion powder, paprika, thyme, black pepper and salt. Thinly slice the steak (or use shaved steak) and toss the steak strips with the seasoning blend.
Preheat a pan or grill over medium-high heat. Add the butter. When melted, add the steak, pepper and onion slices and cook until steak reaches 165℉ internally and peppers and onions are tender-crisp, about 6-7 minutes. Remove from the pan and set aside while preparing the hoagie rolls.
Once you have the beef, peppers and onions cooked, slice open the hoagies. Remove the filling to a bowl. Place the rolls insides down on the pan or grill in the same spot you melted the butter and cooked the filling. Toast for 1-2 minutes or until crispy. Flip over and layer each roll with 4 slices of provolone cheese so that it gets warm and melts slightly.
Remove to a serving platter or plates. Divide steak, peppers and onions between the rolls.
Notes
Fridge Storing: For the best quality, store the pepper, onion and meat mix separate from the buns and cheese and prepare uneaten sandwiches when ready to eat. If you've already assembled the sandwiches, wrap them in foil and keep in the fridge for up to 2 days.Reheating: Remove from the foil and reheat in a toaster, oven or air fryer for about 5 minutes at 260 degrees Fahrenheit.Freezer Storing: Wrap tightly in plastic wrap and put into a freezer-safe storage bag. Freeze for up to 3 months. Thaw them in the fridge overnight or in the microwave using the defrost setting. To get them crispy and warm again, follow the reheating instructions above.Tip 1: For the quickest preparation, use shaved steak packages.Tip 2: We love making these all summer on our grill for family and freinds. Use a big cookie sheet to serve family-style while dining outside in the warm summer air!
