Slow Cooker Whole Chicken

Cooking a whole chicken in your slow cooker with a rotisserie style seasoning is an easy, hands off method to preparing this delicious meal. This slow cooker chicken is so versatile and can be used in a variety of ways, from serving as a main dish with vegetables and potatoes, adding to soups, and as a filling to taquitos and enchiladas, among others.

Ingredients

  • 4-5 lb whole chicken innards removed
  • 2 tablespoon butter melted
  • 1 tablespoon paprika
  • 1 ½ teaspoon onion powder
  • 1 ½ teaspoon garlic powder
  • 1 ½ teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Remove the inner giblets from the chicken (if included). Drain any juice from the inside and pat chicken dry. Place into the slow cooker.
  • Brush the chicken with the melted butter, making sure to get into all crevices.
  • In a small bowl, combine the paprika, onion powder, garlic powder, dried thyme, salt and black pepper. Sprinkle over the chicken.
  • Cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the internal temperature reaches 165℉. The chicken will easily peel from the bone when pulled with a fork and the juices will run clear.
    Optional: ½ way through cooking add vegetables such as chopped carrots or potatoes to make a full dinner.
  • Carefully remove chicken from the crockpot to a serving dish. Let rest for 5-10 minutes, then slice and serve.

Notes

Storing: store in the fridge in an airtight container for up to 1 week or freeze in freezer safe bags for up to 6 months.
