This is an easy Slow Cooker Sweet Potatoes recipe that requires just sweet potatoes and your crockpot! There is minimal preparation and it's entirely hands off. Baked sweet potatoes make a wonderful side dish during the autumn season and for holidays, or turn them into a meal of their own.
6-8large sweet potatoesor more depending on size of slow cooker
Instructions
Arrange the sweet potatoes in your slow cooker, stacking them if necessary. While the recipe calls for 6-8 potatoes, you can use more or less without changing cook time.
Cover and set to high for 3 hours or low for 6 hours. When finished, poke the thickest sweet potato with a fork to check if it's tender. If not, continue cooking in 30 minute increments until potatoes are all fork tender. *see notes for cooking times
Use tongs to carefully transfer the sweet potatoes to a serving dish.
Notes
Cooking Time: this will depend largely on the size of the sweet potatoes and the brand and power of your slow cooker. As a general rule of thumb, small sweet potatoes will take 2-3 hours on high and larger sweet potatoes will take 3-4 hours on high. On low, smaller sweet potatoes should be fork tender in 4-6 hours while larger ones should be done in 6-8 hours. Storing: Store cooked sweet potatoes in the fridge for up to 7 days in an airtight container or wrapped in foil. They can be frozen for up to 6 months, then thawed and reheated in the microwave or oven.
