  • 2 lb boneless chuck roast
  • 2 medium onions, sliced
  • 8 garlic cloves, halved
  • 6 carrots, sliced
  • 4 cups potatoes, quartered
  • 2 tsp rosemary
  • 1 tsp thyme
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup beef broth
  • ½ cup balsamic vinegar
  • 2 tbsp Worcestershire sauce


  • Set the slow cooker to high for 6 hours and add the roast, onions, garlic, carrots, and potatoes.
  • Sprinkle with rosemary, thyme, salt, and pepper.
  • Pour over the beef broth, balsamic vinegar, and Worcestershire sauce.
  • When finished, pull apart roast with a fork and evenly coat all ingredients with the sauce.
