Slow Cooker Beef Stew with Balsamic Sauce
This Slow Cooker Pot Roast with Balsamic Sauce is melt-in-your-mouth delicious! Chuck roast, onions, garlic, potatoes, and carrots are slow cooked in a balsamic sauce made with balsamic vinegar, beef broth, and Worcestershire. A true dump and go slow cooker dinner that can feed large families, house guests, and holiday pot lucks.
Servings: 4 people
- 2 lb boneless chuck roast
- 2 medium onions, sliced
- 8 garlic cloves, halved
- 6 carrots, sliced
- 4 cups potatoes, quartered
- 2 tsp rosemary
- 1 tsp thyme
- 1 tsp salt
- ½ tsp pepper
- 1 cup beef broth
- ½ cup balsamic vinegar
- 2 tbsp Worcestershire sauce
Set the slow cooker to high for 6 hours and add the roast, onions, garlic, carrots, and potatoes.
Sprinkle with rosemary, thyme, salt, and pepper.
Pour over the beef broth, balsamic vinegar, and Worcestershire sauce.
When finished, pull apart roast with a fork and evenly coat all ingredients with the sauce.
