Chicken Tortellini Casserole

Ingredients
- 24 oz tortellini fresh or frozen
- 2 cups cooked diced chicken or shredded rotisserie chicken
- 1 cup fresh spinach torn
- 4 cups jarred alfredo sauce I use Bertolli
- ½ cup grated parmesan cheese
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Pour the alfredo sauce, tortellini, diced or rotisserie chicken, and torn spinach into the casserole dish. Mix until combined.
- Sprinkle with grated parmesan cheese. Cover tightly with foil and bake for 15 minutes.
- Remove the foil and bake for another 5 minutes, or until the top starts to brown.
Notes
Storing: Store covered tightly in the fridge for up to 5 days. Warm in the oven or in individual bowls.
Tips:
- Use another vegetable: peas and carrots are great additions to or substitutions for the spinach.
- Make it vegetarian by eliminating the chicken.
- Use ravioli
