Crispy Roasted Sweet Potatoes

Oven Method

  • Preheat the oven to 425℉. Line a baking sheet with parchment paper.
  • Chop the 3 medium sweet potatoes into small cubes, about 1-2 inches in size. In a large mixing bowl, toss with 4 tablespoon extra virgin olive oil, 3 teaspoon dried oregano, ½ teaspoon freshly ground black pepper and ¼ teaspoon salt.
  • Place potatoes on the baking sheet and bake for 30 minutes, tossing halfway through. Remove from oven and serve warm, with your favorite vegetable and meat or fish.

Air Fryer Method

  • Chop the 3 medium sweet potatoes into small cubes, about 1-2 inches in size. In a large mixing bowl, toss with 4 tablespoon extra virgin olive oil, 3 teaspoon dried oregano, ½ teaspoon freshly ground black pepper and ¼ teaspoon salt.
  • Place potatoes into the air fryer basket or on the tray. They do not need to be in a single layer.
  • Air fry at 400℉ for 15-20 minutes, tossing once halfway through. Remove from oven and serve warm, with your favorite vegetable and meat or fish.

Notes

TIP 1: Depending on how big your potatoes are, you may want to start with less oil, toss, and add more if needed. The potatoes should be lightly coated, not drenched, in oil.
Tip 2: Tossing with your hands will help to evenly coat the sweet potatoes with oil and herbs.
