  • Preheat the oven to 375° Fahrenheit and grease a 2 qt glass baking dish with a little coconut oil. Combine 2 tablespoon ground flaxseed and 6 tablespoon water. Let chill for 15 minutes while preparing the oatmeal.
  • Reserve half of the ½ cup sweetened coconut flakes. In a large mixing bowl. combine 2 ½ cups almond milk, ⅓ cup pure maple syrup, 3 cups old fashioned oats, 2 cups fresh blueberries, ½ cup dairy-free chocolate chips, 1 teaspoon ground cinnamon, 2 teaspoon vanilla extract, 1 ½ teaspoon baking powder and ½ teaspoon salt. Add the flaxseed/water mixture. Mix well.
  • Pour the oatmeal mixture into the greased baking dish. Top with the reserved coconut flakes and drizzle with 3 tablespoon coconut oil.
  • Bake for 35 minutes, or until the center slightly wiggles. Let cool for 10 minutes before serving.
