Twice Baked Cheddar Potatoes
Twice Baked Cheddar Potatoes are a delicious comfort food with simple prep and simple ingredients. Bake potatoes in the oven, then scoop out the insides and mix with cheddar cheese and onions. It's like eating a mashed potato inside it's skin!
- 4 medium potatoes
- 1 small onion, diced
- ¾ cup milk
- 3 tablespoon butter
- 1 cup cheddar cheese
- salt + pepper to taste
- chives for garnish
Wash and pierce potatoes with a fork. Bake in the oven at 350° for 1 hour and 20 minutes.
Saute onions in olive oil until translucent, about 7 minutes.
Cut off tops of potatoes and scoop insides into a bowl.
Add onions, ¾ cup cheddar cheese, milk, butter, salt and pepper. Mash, thoroughly mixing. Taste and adjust salt and pepper.
Place mashed potatoes back into potato skin shells. Sprinkle with remaining cheddar cheese and chives. Bake for 20 minutes.
