Twice Baked Cheddar Potatoes

Twice Baked Cheddar Potatoes are a delicious comfort food with simple prep and simple ingredients. Bake potatoes in the oven, then scoop out the insides and mix with cheddar cheese and onions. It's like eating a mashed potato inside it's skin!

  • 4 medium potatoes
  • 1 small onion, diced
  • ¾ cup milk
  • 3 tablespoon butter
  • 1 cup cheddar cheese
  • salt + pepper to taste
  • chives for garnish


  • Wash and pierce potatoes with a fork. Bake in the oven at 350° for 1 hour and 20 minutes.
  • Saute onions in olive oil until translucent, about 7 minutes.
  • Cut off tops of potatoes and scoop insides into a bowl.
  • Add onions, ¾ cup cheddar cheese, milk, butter, salt and pepper. Mash, thoroughly mixing. Taste and adjust salt and pepper.
  • Place mashed potatoes back into potato skin shells. Sprinkle with remaining cheddar cheese and chives. Bake for 20 minutes.
