Easy Buffalo Chicken Dip

Easy Buffalo Chicken Dip is a must have for parties and social gatherings. No party is complete without this delicious combination of shredded chicken, cream cheese, mozzarella cheese, and spicy buffalo sauce. You can tone down the heat with mild buffalo sauce or amp it up with hot buffalo sauce.

Ingredients

  • 1 rotisserie chicken, shredded
  • 8 oz cream cheese
  • ½ cup sour cream
  • 1 tablespoon olive oil
  • 1 ½ cup buffalo sauce
  • 1 tablespoon garlic powder
  • ¼ teaspoon salt
  • pepper to taste
  • ½-1 cup shredded mozzarella cheese
  • scallions to garnish

Instructions

  • In a large pan, combine rotisserie chicken, cream cheese, sour cream, and olive oil. On medium heat, mix until combined well and cream cheese is melted, stirring constantly.
  • Add the buffalo sauce, salt, pepper, and garlic powder. Continue cooking until all ingredients are distributed evenly, about 5 minutes. Stir constantly.
  • Remove from heat and taste. Add more salt, pepper, and buffalo sauce if desired. Add mozzarella cheese, ½ cup at a time (you may not need it all). Stir until cheese is melted and stringy.
  • Transfer to a serving dish and garnish with chopped scallions. Serve with celery, carrots, and chips for dipping.

Notes

Use a mild buffalo sauce for less heat, or a medium/hot for more spice.
