Instant Pot White Chicken Chili

Instant Pot White Chicken Chili is super easy to put together and makes a great weeknight meal in less than 30 minutes. Using rotisserie chicken saves us a ton of time while adding incredible flavor! This healthy version of chicken chili is dairy-free and can be made mild or spicy to suit every chili lover's preference.

  • Add olive oil to the inner pot of the pressure cooker. Set to saute on high for 3 minutes. Add diced onion, minced garlic, and half of the sliced jalapenos to the pot. Reserve the remaining jalapenos for serving. Cook, stirring frequently.
  • Pour the chicken broth into the inner pot and deglaze, scraping stuck pieces off the bottom of the pot. Add the fire roasted chilis, oregano, cumin, ancho powder, chili powder, salt and black pepper.
  • Close and seal the pressure cooker lid. Set to pressure cook/manual on high for 5 minutes. Complete a controlled quick release of the pressure when done. Remove the lid and stir in shredded chicken, cannellini beans, and sweet corn. Let warm through for 5 minutes.
  • Serve topped with fresh torn cilantro leaves, sliced jalapenos, tortilla chips and cheddar cheese if desired.

Notes

How To Control Spiciness: Add less jalapeno and without the seeds for a mild chili. For a spicier chili, add more jalapeno peppers and their seeds. Habanero peppers can be added to make it spicier too! 
To Thicken: When the chili is done pressure cooking, stir in ½ cup of sour cream, cream cheese or plain yogurt. 
Tips For Serving: White chicken chili is delicious served with extra jalapeno peppers and fresh cilantro on top. For a non-dairy version, add shredded cheddar cheese. Tortilla chips are also perfect for dipping into the sweet and hearty chili broth, as they add a salty crunch!
