I have a confession. I hate throwing away leftover food. I'd rather eat all the leftover meals or little bit of this and that we didn't need for that recipe than throw it away. It doesn't matter if its those pickles that I love or those carrots that I hate. I'll do anything not to throw it away.
Which means I make a lot of "clean out the fridge" meals throughout the week. And lately I've had a lot of little bits of canned pumpkin leftover, so I decided to mix up my favorite breakfast food (NY bagels!) into my pumpkin obsession. That means Homemade Pumpkin Cream Cheese!
Not only is Homemade Pumpkin Cream Cheese better and healthier than the store bought kind, my kids love it and have no idea they are eating a vegetable for breakfast. Technically pumpkins are a fruit, but hey, they seem like a vegetable to me!
Plus, it goes perfect with a homemade pumpkin spice latte.
Ingredients Needed:
- Canned pumpkin (not pumpkin pie filling)
- Cream cheese: I use ⅓ less fat to make it a little bit healthier, but full fat cream cheese is perfectly fine
- Pumpkin spice: sometimes its called pumpkin pie spice, but it's all the same
- Brown sugar
- Cinnamon raisin bagels
To, a homemade pumpkin cream cheese tastes best when combined with the cinnamon flavor of cinnamon raisin bagels. But you can use your bagel of choice. I think it would taste great on plain, whole wheat, sesame, or poppy seed bagels, too. You can also try it on English Muffins or toast.
Making Homemade Pumpkin Cream Cheese
Pumpkin cream cheese takes about 2 minutes to make. By the time your bagel is done toasting, you're cream cheese will be ready to spread.
Simply combine the pumpkin, cream cheese, brown sugar, and pumpkin spice in a bowl and mix with a fork until everything is combined well and is soft and creamy.
