If I told you that keto all-the-rage cloud bread led me to the best banana strawberry muffins recipe I've ever made, would you believe me?
Yes, 3 failed cloud bread attempts, an entire dozen eggs wasted, 2 hours of my life, and a year's worth of frustration...and the end result was this happy last minute, thrown together treat!
No one wants to waste an egg during a pandemic, let alone an entire dozen. Sigh. I love bread, so why even try an imposter bread made anyway. Well it looked cool and healthy! But apparently the conditions have to be just right for the batter to work, and here in Northern Virginia in the heart of August, it was just way too humid. Oh well.
If it can't be made easily every time, I don't want it. Busy mama's have no time for difficult recipes and failed meals.
My frustration needed fixing with our favorite thing to make..muffins! The bananas and strawberries were about to go bad, so this perfect combo led to another fantastically moist and flavorful muffin.
This muffin recipe is mostly a banana muffin recipe, with a touch of sweet strawberry in each bite. My favorite basic muffin is used, the one I use for all of my fruit-filled muffins, but only the banana chunks are added to it. I save the strawberries for the top and coat them in a touch of flour and sugar for added sweetness (and so they don't sink).
Read on to see just how easy it is to make this fluffy, moist basic muffin recipe and then use it with all your favorite mix-ins!
How To Make the Best Basic Muffin Batter
After many years of muffin making and experimenting with different ingredient ratios, this is by far the best basic muffin batter. This is a versatile batter that different fruit and spice mix ins can be added to.
You will want to use
- 1 ½ cup all purpose flour
- ⅔ cup sugar
- 2 tsp baking powder
- ½ tsp salt
- ⅓ cup olive oil
- 1 ½ tsp vanilla extract
- ½ cup milk (whole, almond, low fat, etc.)
- 1 egg
To this basic muffin mix, add 2 cups of chopped fruit. You should add some warming spices too, such as cinnamon, nutmeg, or ginger, or a combination. Anywhere from ½ to 1 teaspoon of each is a good rule of thumb.
This basic muffin recipe will make 6 jumbo muffins, 8 standard muffins, and about 24 mini muffins.
Getting your Muffins to Rise Perfectly
A little trick to getting perfectly risen muffins is to fill any empty cups with 2 tablespoons of water. Doing this gives me a nice rise every time, with no sunken centers!
