Serve your strawberry baked oatmeal casserole will a helping of yogurt for an extra creamy and wholesome family-friendly breakfast.

Oatmeal with berries and chocolate is one of our favorite wholesome breakfasts. We love overnight oatmeal for busy work and school mornings and warm stove-top oatmeal on the weekends.
My family's favorite way to eat oatmeal is packed with fresh berries, chocolate chips, and drizzled with honey. We stopped buying pre-sweetened and flavored oatmeal packages long ago. A homemade oatmeal bowl sweetened with ingredients in your pantry or fridge is so much better.
We had family stay with us last week, and I wanted to make a healthy and satiating breakfast. One that would be easy to make, easy to clean up, and delicious to eat!
This strawberry baked oatmeal recipe was that perfect breakfast. It was so simple and delicious that I made it again a few days later, to serve at breakfast all week long.
This strawberry baked oatmeal is an ideal healthy breakfast for large families, too. Even my 18 month old baby couldn't get enough! And with 5 others eating, we still had leftovers. It is excellent served with a generous helping of plain yogurt or extra fresh berries.
Baked oatmeal is awesome because all you need to do is mix all of your ingredients in a bowl, pour it in a casserole dish, drizzle it with butter, and bake.
It's a simple mess-free and one-bowl breakfast.

A baked oatmeal casserole is exactly what it sounds like. Instead of boiling oatmeal on the stove, heating it in the microwave, or soaking it in mason jars overnight, oatmeal is mixed with milk, sweeteners, spices, and mix-ins (fruits, chocolate, etc) and baked in the oven.
The flavor options are endless. Once you find a basic baked oatmeal recipe, you can alter the ingredients to suit your preferences. A cinnamon-spiced apple and cranberry baked oatmeal sounds delicious in the fall and a mix berry baked oatmeal casserole is perfect in the summer at the peak of berry season.
I hope this strawberry baked oatmeal becomes your go-to basic oatmeal recipe and a staple breakfast for your family.
Ingredients
To make this recipe, you will need:
- almond milk (I use unsweetened vanilla, but you can use any)
- eggs
- maple syrup
- old fashioned oats
- chopped strawberries and raspberries (or any mixed berries)
- chocolate chips
- cinnamon
- vanilla extract
- baking powder
- salt
- sliced almonds
- melted butter
The chocolate chips and almonds are optional, but really make the meal! I suggest using them both, unless you are allergic to nuts.
While I love this with fresh strawberries and raspberries, you can sub blueberries or a mixture of all three. I also prefer using almond milk in most of my recipes, especially vanilla milk which I use in these popular vanilla almond milk pancakes. But, you can use plain almond milk or dairy milk also.
Step-By-Step Directions
Making strawberry baked oatmeal is incredibly simple.
First, preheat the oven to 375° and grease a 2 qt glass baking dish with a little melted butter. I use a glass dish that is about 9 inches by 6 inches, or 2 quarts.
Then combine all ingredients but ½ cup of berries, the almonds, and the 3 tablespoons of butter. Mix thoroughly and pour into the baking dish.
Top with the reserved berries and almonds. Drizzle with melted butter.
Bake for 35 minutes. The center will slightly wiggle when done. Let cool for 10 minutes before serving.
To serve, you can add extra berries or plain yogurt to your bowl of freshly baked oatmeal. Enjoy!
